Made this last Night for Dinner, wasn't able to get large Zucchini, so I made it with Eggplant instead, soooo Yummy!!! I used and stuffed two eggplants, also I used only about 2 Tbl. Butter and a little Olive Oil and dried Thyme!! =) I also brushed the inside of the eggplant with olive oil before I stuffed them! Will definitely make this again and I will continue to use the Eggplant, cause it is just too good!!!
Corn Bread Stuffing with Apples, Bacon and Pecans; In Texas, we would call this dressing, not stuffing. I am intrigued with this recipe. It is worth a try for sure.
