Carrot Rice - fragrant basmati rice sauteed with carrots, onions, fresh ginger, peanuts, and cilantro. I used brown basmati rice and also used both peanuts and cashews. I also skipped the cilantro. Fragrant and a nice change from plain rice.
I found it very difficult to get children (and even my "big kid") to eat carrots. By adding an orange and serving carrots crisp-tender, I have found that my family is very receptive to this vegetable dish.
