Macadamia Ricotta (DF/GF) 2 cups Macadamia Nuts 1 teaspoon Salt Juice from 1/2 medium lemon (about a tbsp) 1/2 cup water Puree ingredients together in a food processor until it reaches a smooth consistency. Scrape down the sides with a spatula and add more water if required. The end result should look exactly like ricotta cheese. :)

If you want it more thick and creamy, add less milk. - if you would prefer a sweeter milk, put the milk back in the blender and add 1 tablespoon of honey (maple/rice malt syrup if vegan) and a pinch of sea salt and blend. - You can also replace the honey with 4 soaked pitted dates!
