Blackened chicken with cilantro lime quinoa and avocado cream sauce. (SO yummy, def. has a kick to it! Doubled the spices for four pieces of chicken but original quinoa recipe makes enough for four IMHO. Sauce helps tame the chicken for family members that may not be into the spicy stuff such as my DH. - MM 4/18/12)

Blackened chicken with cilantro lime quinoa and avocado cream sauce. I've made this twice already. The avocado sauce on top is simple and goes really well with everything! YUM.
