Made in the Pyrénées-Atlantiques, Ossau-Iraty is one of the world's best sheep's milk cheeses. Originally produced in French and Basque regions bordering modern-day France and Spain, the cheese bears a shared place-name (Ossau refers to the French, Iraty to the Basque). While it may be sold at 5-8 months, Ossau-Iraty improves with time, with optimal flavors around a year and a half. Of course, this is subjective, so try it out. See if you like it fresh or aged.
