Rachel Ray's Meatloaf Muffins - 2/3 to 1 3/4 lbs ground sirloin, 1 medium onion, 2 ribs celery, 1 green bell pepper, 1 large egg plus a splash of milk, beaten, 1 cup plain bread crumbs, 2 tbsp grill seasoning (recommend Montreal Steak Seasoning by McCormick), 1 cup smoky BBQ sauce, 1/2 cup tomato salsa, 1 tbsp Worcestershire sauce, Vegetable oil or extra-virgin olive oil
i'd like to try making meals from muffin tins as a sort of portion control. make something, freeze it and only thaw what you should eat. I will eat and eat whatever is in front of me, but most of the time i am too lazy to go get more food. This could work!
