apple fritter muffins-yep loved these-however, make sure to use liners not just spray the pan...and also they don't work as well making them in the big cupcake pan-made alot more than 14 for me even filling the cups-girls LOVED them!

Apple Pie Muffins- 2 1/4 cups all-purpose flour 2 teaspoons pumpkin pie spice 1 teaspoon baking soda 1/2 teaspoon kosher salt 1 egg 1 cup buttermilk 1/2 cup butter, melted 1 teaspoon vanilla extract 1 1/2 cups packed brown sugar 2 cups peeled, chopped Granny Smith
Apple Fritter Muffins-I made 1/2 recipe with modifiction:Apples:1.5Tbl butter, 2c diced apples, 2Tbl sugar, 1tsp cinnamon, 1Tbl water, 2.5Tbl flour and splash vanilla. Muffins:1c+ 2.5Tbl flour, 3/4tsp baking powder,1/4tsp baking soda, 1/2Tbl cinnamon, 1/4tsp salt, 2Tbl applesauce, 2Tbl oil, 1tsp vanilla, 1/2c sugar, 2.5Tbl brown sugar, 1 egg, 1/2c milk.Glaze:1Tbl butter,1/2c powdered sugar, 1tsp vanilla,1/2-1tsp water. Made 12 muffins, use liners next time.Baked at 375 degrees for 12 min.
