    These are SOOO GOOOOD! And they are soooo easy. MAKE sure to season them enough! This is a great side for a steak dinner if you are bored with the baked potato

    I made this recently. Stacked 3 zucchini, 2 yellow squash, one tomato, one yellow onion sliced and then halved (like half moons) and one potato in a square dish. Drizzled evoo, sprinkled salt, pepper and Morton & Bassett italian seasoning over the top. Baked a little longer testing with a fork then covered with cheese and continued baking, sooo yummy.

    Tomato, Sweet Potato, Zucchini, Summer Squash Casserole: slice all veggies approx same size alternate slices in baking dish drizzle with olive oil minced garlic & onion, s, thyme, bake at 425 for 20 min, top with Parmesan then bake another 15 min

    Zucchini Cakes. Freshly shredded zucchini with Parmesan cheese, garlic and spices, pan fried until golden brown.

    Vegetable Tian ~ Ingredients: 1 tablespoon olive oil 1-1/2 cups diced sweet onion, 1-1/2 teaspoons minced garlic, 1 medium zucchini thinly sliced, 1 medium yellow squash thinly sliced, 1 medium baking potato thinly sliced, 3 medium tomatoes thinly sliced, 1 cup shredded Italian cheese blend, Italian seasoning to taste, Salt and pepper to taste.

    Onions!

    Toss chopped peppers, potatoes, zucchini, red onion and sausage with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this.
