Yaki udon- Japanese noodle stir-fry dish with veggies and chicken. this was delicious! will be making it again for sure. i couldn't find bottled yakisoba sauce like the recipe called for so i made my own, it only uses a few tbsp so its fine. really, really good.

The celery and onions compliment the black pepper’s bite and add crunch to a very simple dish. Dish for a single person as well as for a small crowd. You could also make this stir-fry without the Yakisoba noodles and serve it over rice.
Chili Cornbread Casserole. shown is a from-scratch recipe, but i just used canned chili without beans, mixed with a can of red kidney beans, topped with jiffy corn muffin mix, and topped with cheddar just before serving. my husband loved it! i've also made a version with a thrown together taco chili (2 cans of red kidney beans, 2 cans of corn, a can of rotel and a can of diced tomatoes for chili, mixed with a packet of taco seasoning.)
Easy Sesame Chicken - easy and delicious, as promised! Next time, will use a wok and fry the chicken in two or three batches. May double sauce and halve the sesame seeds - there were way too many for our taste!
Chicken and Bows -- This turned out really well. I added fresh onion and garlic w/ the red pepper when I cooked the chicken (instead of a dutch oven I used my cast iron skillet). For the sauce in addition to the ingredients listed I added around 1/2 cup of white wine. Mixed it with tricolor bow-tie pasta. Made a shit ton and it was super easy, definitely working this into our dinner rotation. - Sounds good!
