Oven Baked Chicken Fajitas...made this for dinner and it is a keeper! I didn't have tomatoes with chilies, so I added about 2T salsa, and sprinkled black pepper on top just before baking. Hubby loved it! I want to try it with beef strips sometime.
Fiesta Chicken Casserole: 2 Cups Cooked Chicken Breast, 2 Cups Cooked Pasta Shells, 2 Cups Cheddar Jack Cheese, 1 can Cream of Chicken Soup, 1 Can Rotel, 1/2 Cup Milk. Cover top with cheese. 350-Degrees for 20 Minutes.
