Black Bean Avocado Lettuce Wraps 1 Black Bean Burger patty 2 swiss chard or butter lettuce leaves 1 small tomato 1/4 avocado pinch of salt & pepper Cook the Black Bean Burger patties to RFFMBT instructions. Cut the tomato into slices. Remove 1/4 of the Avocado “meat” from skin. Place half of the Black Bean Burger patty and half of each ingredient into the lettuce leaves, creating two wraps. Sprinkle with pinch of salt & pepper. Wrap the leaves into tight rolls and then slice in half.

Cashew Chicken Lettuce Wraps Chicken Cashew Lettuce Wraps Makes 6-8 lettuce wraps. Ingredients For stir fry sauce: 2 tablespoons soy sauce 1 tablespoon rice vinegar 1 tablespoon brown sugar 1/4 teaspoon ground red pepper 1/4 teaspoon ground ginger 1 teaspoon sesame oil For Cashew Chicken: 2 chicken breasts (about 3/4 lb. total), diced 8 leaves of greenleaf or iceburg lettuce 3 tablespoons canola oil (or oil of choice) 1 cup onion, diced 2 garlic cloves, minced 1 teaspoon soy sauce 1/4 cup cashews, chopped Salt and pepper to taste Instructions For stir fry sauce: Mix all ingredients making sure to dissolve brown sugar. Set aside. For Cashew Chicken: Heat canola oil in pan over medium to medium high heat. Add diced chicken and brown (about 4-5 minutes). Remove chicken from oil. Add onions, garlic and 1 teaspoon soy sauce to pan; brown. When onions and garlic are brown and tender, add stir fry sauce, browned chicken, and cashews. Saute mixture for a few minutes and remove from heat. Spoon chicken mixture into individual lettuce leaves. Add your favorite hot sauce, more cashews or basil.

Chicken Parmesan Meatballs Chicken Parm Meatballs Ingredients 1 1/4 pounds ground chicken 1/2 cup breadcrumbs 2 tablespoons chopped onion 1 tablespoon chopped parsley 1/2 cup Pecorino (or Parm) salt to taste pepper to taste 1 clove garlic, minced 1 teaspoon fennel seeds 1 egg, whisked zest of half a lemon 3 tablespoons olive oil 1 14-ounce can storebought pizza sauce (such as Don Pepino’s) about 4 ounces fresh mozzarella (a dozen thin slices; to pile on the cheese would be to cancel out the fact that you were virtuous enough to replace fatty beef with lean chicken) Directions In a large bowl, gently mix together first 11 ingredients. Shape into lacrosse-ball size balls (that would be a little smaller than tennis ball) and place a few inches from each other on a foil-lined baking sheet. In a small bowl, mix one spoonful of your pizza sauce with olive oil. Brush this mixture on top of each meatball. Place it in heated oven ( Preheat oven to 400°F) and bake for 15 minutes. After that, remove meatballs from oven, put some sauce on top of each meatball, and cover each with a slice of cheese. Broil another 3 to 5 minutes until cheese is golden. Heat remaining sauce in a small pan. Serve meatballs with a dollop of sauce and a raw Tuscan kale salad that has been shredded and tossed with shallots, olive oil, salt, and pepper.

This sounds so good! 3 cups frozen cauliflower florets 4 1/2 oz (about 1 1/4 cups) uncooked high-fiber elbow macaroni 2 tbsp light sour cream 2 slices 2% American cheese 4 wedges of The Laughing Cow Light Creamy Swiss Cheese Optional seasonings: salt and black pepper Directions Place cauliflower in a large microwave-safe bowl; cover and microwave for 3 minutes. Uncover and stir. Re-cover and microwave for 2 to 3 minutes, until hot. Drain excess liquid. Roughly chop cauliflower, return to the bowl, and cover to keep warm. In a medium-large pot, prepare pasta per package instructions, about 7 minutes. Drain pasta and stir into cauliflower. Cover to keep warm. In a medium microwave-safe bowl, mix sour cream, cheese slices, and cheese wedges, breaking slices and wedges into pieces. Microwave for 20 seconds. Stir well. Parmesan potato chips -sounds divine! Slice potatoes (2lg) into very thin slices (1/4 inch). Toss potatoes in (3Tbsp) olive oil, Italian seasoning (1tbsp) and salt (1tsp) in a ziplock bag to coat. Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.
