Broccoli and Italian Sausage Egg Muffins. Preheat oven to 375 F, saute sausage, stir in broccoli, whisk together eggs, milk, oil & baking powder & seasoning; spoon out the sausage and broccoli mixture evenly into greased cupcake pan & ladle the egg mixture over sausage and broccoli; bake for 15-20mins. I made this last night, Emeril's Rigatoni with Broccoli and Sausage. I love citrus flavor, so I added 3x amount of lemon juice, and just made extra sauce all together. It is delicious.
Broccoli and Italian Sausage Egg Muffins ~Preheat oven to 375 Brown 1 lb Italian Sausage. Remove from heat and stir in 1 C broccoli. Whisk 8 lg eggs, 1/4 C milk, 1/2 tbsp oil and 1/2 tsp baking powder. Season with salt and pepper. Spray cupcake pan. Spoon sausage and broccoli mixture evenly into each cup. Ladle egg mix over sausage. Sprinkle with Parmesan cheese. Bake for 15-20 minutes.
