Ever try something new, and then eat it every day for about a week? Hominy Quesadillas are my new favorite treat. For those not familiar, Hominy is like a big kernel of corn, chewy and savory. Make a regular Quesadilla your usual way, but add drained, canned white or yellow hominy for awesome corn flavor. TIP: I make mine with Chihuahua cheese, a big spoonful of hominy, and leftover steak or chicken fajita meat. Maybe add a black bean or two. Heavenly.
