Berberechos By Matiz (Cockles) Berberechos, or cockles, are a local delicacy in the region of Galicia. There are wild harvested from the coastal waters and packed by hand to preserve their delicate flavor. Served up with a touch of lemon and parsley, they make the perfect appetizer. Once caught, the cockles are prepared by hand using old master cannery know-how and then packed with the highest attention to detail. They are packed in brine and have a mild, refreshing flavor.
