Not pleased with these. Hard and too sweet! I am TOTALLY ditching a good share of the sugar in the curd & will add egg. WAS too sweet. I prefer more of the lemon coming out.
For the crust, I use 1 TBSP less butter. For the filling I use Meyer Lemons. I increase the juice to about 1 Cup, use the zest of all the lemons juiced, and add an additional egg. This may increase the baking time about 10 minutes.
