    Mini Muffin Corn Dog Poppers 2 ounces cream cheese (a quarter of a block) 1 box Jiffy cornbread mix 1/3 cup milk 1 egg 2 hot dogs, diced 1 jalapeno, diced Put cream cheese in freezer for 5-10 minutes to firm up. Preheat oven to 375 degrees. In bowl, combine the cornbread mix, milk and eggs. Fold in hot dogs, jalapeno and cream cheese cubes. Spray mini muffin pan with nonstick spray. Divide batter into muffin cups. Bake 15-20 minutes til golden. From Anne in Salem

    I made these for lunch today. I added a little melted butter to the mix. I used a little cayenne pepper from my spice rack since I didn't have the real thing on hand. They were crumbly (probably from the butter), but still delish.

Breakfast Pancake Muffins Translated from German site: This will work with all pancake recipes: prepare Pancake recipe as usual, and use a regular muffin tin (I have used mini muffin cups), pour batter, bake in the oven at 350° F. For the mini muffin tin it took 14 minutes, regular muffin pans take about 18-20 minutes, depending on the pancake mix.

Chili Casserole -1 lb ground meat (I used turkey, but you could use beef or venison) -2 cans tomato sauce (8 oz. each) -1 package chili seasoning -2 cups shredded cheddar cheese -1 box Jiffy cornbread mix Preheat oven to 400 degrees. Cook meat and drain. Add sauce and seasoning. Bring to a boil, then reduce heat to simmer for 10 minutes. Remove from heat and add 1 cup cheese. Place in 8 x 8 dish. Prepare cornbread according to package and evenly spoon over top. Bake for 15 minutes. Add remaining cheese and bake for another 2-3 minutes.

Corn Dog Mini Muffins..looks like such a fun Sunday Football snack or something. Instead of making cornbread muffins from scratch, just use Jiffy cornbread mix. Also instead of hotdogs, I would use lil' smokies, Kelbasa or hot links.
