    Poached Eggs over Polenta with Olive-Herb Pesto

    Vegetarian • Gluten free • Serves 4


    1 cup Italian parsley or basil, fresh
    1/2 cup Oregano, fresh
    1/2 cup Thyme, fresh


    1/2 cup Green olives

    Pasta & Grains

    2 cups Polenta

    Baking & Spices

    3/4 tsp Salt

    Oils & Vinegars

    1 tsp Lightly-colored vinegar
    1/3 cup Olive oil


    1/2 cup Cheese, hard


    8 cups Water

      Poached Egg, Polenta with Olive-Herb Pesto: For the pesto ~ olive oil; green olives; basil; oregano; thyme. Chop and mix olives and fresh herbs; stir in olive oil; season; set aside. For polenta ~ polenta; water; Parmesan cheese; salt. Add polenta to boiling water; lower to a simmer; cook; stir in cheese; season; set aside. For poached eggs ~ eggs; vinegar; salt. Poach the eggs. Assemble the dish ~ ladle polenta into a bowl, add an egg, garnish with olive-herb pesto. #Polenta #PoachedEgg #Pesto
