Mini Chicken Pot Pies Filling: Mix 1 tbs veg oil, 1 lb bnls chicken breasts, cut into sm pieces, 1 med onion, chopped (1/2 c), 1/2 c chicken broth, 1 c frz peas & carrots, 1/2 tsp salt, 1/4 tsp pepper, 1/4 tsp thyme, 1 c shred Cheddar cheese (4 oz) Baking Mix: mix 1/2 c Bisquick, 1/2 c milk, 2 eggs. Directions: Heat oven to 375°F, Add 1 tbs of Bisquick mix in each greased muffin cup, add  ¼ cup of filling mix to each cup. Top w/ 1 tbs of Bisquick mix. Bake for 25-30 minutes
