Lasagna with zucchini instead of pasta. It was actually delicious and I would make it again. Even my husband who wont eat zucchini liked it. I didn't miss the pasta at all. I made a few alterations. Fresh basil, store bought sauce, diced tomatoes, extra cheese, ricotta instead of cottage cheese and I didnt pre cook the zucchini because I like a little more texture.
