This was pretty tasty.  The more I ate, the more it grew on me.  I only did 1.5 tsp cocoa powder and that came out just the right balance between that and the almond butter for me. This was really good!  It reminded me of beef stroganoff, just a lower carb/vegan version.  :)  I did about 1/3 of the zucchini, lots of extra mushrooms (used baby bellas), and 1/4 of the sauce was still moooore than enough!  I didn’t add all the broth to my sauce because I figured my shrooms and zucchs would be wet still when I added it, and I was right! This was delish!  I used a pomegranate margarita mix, very tasty, and I marinated the chicken beforehand instead of basting during cooking.  Great combination of flavors, easy and fresh.  Loved it!  (Picture by me, linked to original recipe)

These were pretty good.  The patties themselves weren't very flavorful; they definitely needed the spicy mayo.  The patties were a fun texture, though, with the fluffy egg whites in them.  Another thing; recipe says 2lb. squash to get 4 cups... my 2lb. squash gave me 2 cups.  I cut back a bit on panko, but otherwise did a whole recipe, and they still turned out. These were so good! The sauce especially was amazing. The recipe makes enough sauce for the meatballs, but if you want any extra for noodles or what have you, gotta double it, at least. I doubled the sauce and still just used 5 chiles. It was sooo hot! I like spicy, but I'll be cutting back next time. I also replaced 1/2 cup of the half and half with more broth and used already cooked chicken. Recipe says to pinch dough to close cookie, but the dough is very NOT sticky, so this was impossible.  Frustrating til I started just folding the dough over, and since it goes seam side down, no need to seal.  NOW I see in the picture that’s what they did as well. So good! I made fig instead of berry which may’ve been why the fruit was runny. This made it hard to assemble but it was fine baked.
