    Print Zucchini Rolls with Goat Cheese Prep Time: 10 minutes Cook Time: 6 minutes Total Time: 16 minutes about 16 rolls Ingredients 2 zucchinis (medium size) olive oil about ½ cup (120 ml) soft goat cheese (or feta) 2 tablespoons chopped olives 1 teaspoon thyme salt & pepper, to taste Instructions Preheat grill pan (or grill). Mix the goat cheese (you may need to beat it a little to soften), chopped olives and thyme in a bowl. Cut the zucchinis into thin slices (lengthwise). Brush them with a little olive oil and grill on both sides, until they have grill marks. Let them cool a bit. Place about a tablespoon of the goat cheese mixture onto each slice. Roll up. Serve immediately or at room temperature.
