Pineapple Mojito 6 chunks of canned or fresh pineapple 8 mint leaves 1/2 oz. simple syrup (dissolve one part sugar in one part hot water) Juice from a lime, plus a couple of pieces 2 oz. Bacardi Limón rum Splash of soda Muddle all ingredients but rum in a glass. Add ice, rum, and a splash of soda. Stir well. Garnish with pineapple.
