Individual Egg Casseroles, my version: Into 6 cup muffin pan, press 3 Tater Tots into bottom, in seperate bowl, whisk 4 egg & 2 Tbsp milk, pour over Tater Tots, sprinkle Bacon Bits on top, bake 350 for 30 minutes.
This is the best carrot muffin recipe I have ever made. (Not that I have made a lot.) I changed the recipe by adding 1 tsp of vanilla and 1 cup of walnuts. I also didn't have whole wheat flower and substituted with white flower. I also used golden raisins. (Alternative - more oats, less sugar, coconut oil and yogurt or apple sauce). (Made 8/9/15)
Buttermilk-Blueberry Breakfast Cake. Serves 6-8 ½ cup unsalted butter, room temperature 2 tsp. lemon zest or more — zest from 1 large lemon 3/4 cup + 2 tablespoons + 1 tablespoon sugar 1 egg, room temperature 1 tsp. vanilla 2 cups flour (set aside 1/4 cup of this to toss with the blueberries) 2 tsp. baking powder 1 tsp. kosher salt 2 cups fresh blueberries ½ cup buttermilk
Omg!!! Why have i never thought of this?! Mix pancake mix as directed and add cooked sausage crumbles. Spray mini muffin tin with Pam and full with pancake batter. Sprinkle the extra sausage on top and bake at 350 for 13 minutes or until golden brown. Serve with butter and syrup. Enjoy these delicious bites! Could even use bacon!
Cannoli French Toast From Everyday 1/4 cup confectioners' sugar plus more for dusting 1 cup ricotta cheese 2 eggs 1/2 cup milk 12 slices sandwich bread, crusts removed 2 Tablespoons extra-virgin olive oil
HOOTENANNY (Or Oven Pancake): Blend up 1 c. white flour, 1 c. milk, 6 eggs, and 1/4 tsp. salt. Pour batter into greased 9x13 pan. Then, pour 1/2 cube melted butter over the top (do not mix). Bake for 25 minutes at 400 degrees. Cut in pieces, drizzle with Maple Syrup, serve. (It's even better with bacon!)
