Broccoli and Italian Sausage Egg Muffins ~Preheat oven to 375 Brown 1 lb Italian Sausage. Remove from heat and stir in 1 C broccoli. Whisk 8 lg eggs, 1/4 C milk, 1/2 tbsp oil and 1/2 tsp baking powder. Season with salt and pepper. Spray cupcake pan. Spoon sausage and broccoli mixture evenly into each cup. Ladle egg mix over sausage. Sprinkle with Parmesan cheese. Bake for 15-20 minutes.

Pour egg into indent made with spoon in step 2 4. Sprinkle cheese onto surface of egg white 5. Broil at 400 degrees until golden brown on edges and cheese has melted 6. Garnish with pepper as desired
