SW Black Bean Salad - •15.5 oz can rinsed & drained black beans•9 oz cooked corn, frozen•1 chopped tomato•1/3 C chopped red onion•1 chopped scallion•1 1/2 - 2 juice of limes•1 T EVOO•2 T cilantro •salt & pepper•1 diced avocado: Mix beans, corn, tomato, onion, scallion, cilantro, salt & pepper.
