Erin's Gluten Free Peanut Butter Cookies  1 cup peanut butter ½ cup light brown sugar ½ cup sugar 1 egg ¼ tsp. salt  1 tsp. vanilla  1 tsp. baking soda  ¼ cup of sugar for rolling  Mix pb, brown sugar, and ½ cup of sugar until fluffy.
