12 English-cut short ribs (about 6 pounds)


1 Carrot
1/2 cup Cilantro, leaves
4 cloves Garlic
3 tbsp Ginger, fresh
1 Kirby cucumber, small
2 Limes, wedges

Canned Goods

4 cups Chicken broth, low-sodium


1/3 cup Soy sauce

Pasta & Grains

10 oz Rice noodles, medium thick

Baking & Spices

1/4 cup Sugar

Oils & Vinegars

2 tbsp Sesame oil, dark toasted


2 tablespoons Korean red chili paste or sambal oelek, plus more for serving
1 bunch Scallions (white and green parts, separated), thinly sliced

Didnt stir in Parm but just grated some on top before serving. Great with simple grilled cheese sandwiches. Kids liked the soup. Though not likr Norstrom Cafe's tomato soup (which has something like 2 cups of heavy cream), I will make again.
