Simple Blood Orange and Kale Salad with a White Balsamic Vinaigrette [vegetarian] by Spoon Fork Bacon

Beef, Kale, and eggs, Oh my!  Instead of 1/2 cup(s) water, I used only 1 cup of chicken broth and a healthy squeeze of fresh lemon.  I had leftover slices of roast beef that I sauteed laid them over top of a good portion of kale.  Fried up two sunny-side eggs and Wah Lah! Amazingly delicious low carb dinner!

UPDATE: I have made this dish so many times but I don't add so much I usually only add a bit of dairy soy free butter, garlic, salt and either onions or shallots an it's amazing!!
