The northern white cedar is an evergreen with flat scalelike leaves. It has reddish brown bark that hangs in hairy shreds. A tea is made from the leaves and twigs, and is very high in Vitamin C. The tea of the twigs and branches is simmered until the water in the pot begins to turn brown. It is then used for fevers, rheumatic complaints, chest colds and flu. The bark of the root of apple trees is used for fevers. Apples-rich in magnesium, iron, potassium, and Vitamins C, B and B2, reduce acid in stomach, cleanse liver, promote restful sleep. Peeled, relieve diarrhea, stewed unpeeled a laxative. Baked apples can be applied warm as a poultice for sore throats and fevers. Unpasteurized apple cider will restore the correct bacteria to the bowels after antibiotics.
Beech trees have a distinctive, smooth gray bark that resembles the skin of an elephant. The bark is used as a tea for lung problems, including tuberculosis. Amaranth (pigweed) Leaves are high in vit. C. Tender leaves can be cooked for 10-15 min., or added to salads. Leaves of some species can be unpalatable, so it is a good idea to sample the leaves before you gather a large quantity. The numerous tiny black seeds are highly nutritious. They are high in protein, and contain vitamins E, and B complex. they can be mixed 1 part seed to 2 parts water, brought to a boil, covered, and simmered for about 25 minutes, or until the water has been absorbed.
Purple Dead Nettle - edible and medicinal. The leaves and upper plants are cooked as pot herbs or added to salads. The plant is very nutritious, high in iron, vitamins and fiber. The whole plant is medicinal, used as an astringent, diaphoretic, diuretic, purgative, styptic and tonic.
Natural Remedy for Cough - Honey. Take a teaspoon of honey straight, or make some herbal tea and add honey. You can also add a squeeze of lemon to a spoonful of honey for some extra Vitamin C. My kids love getting honey when they have a cough or sore throat. Be sure not to give honey to children under one though.
Horehound. Cold and flu remedy (Horehound candies), mint family. Very bitter and can make a bitter medicinal beer.
