Potato Salad with Dill + Horseradish Aioli. This is a relatively simple and healthy alternative to the usual -- but not as much wow factor as I expected. We substituted mayo with lemon juice and horseradish for the aioli to avoid the raw egg.
Place the feta cheese on a bed of herbs (oregano, thyme, mint...) on a baking sheet, add olive oil, honey and black pepper. Wrap up and place in the oven for 15 minutes (225 celsius). Slice the tomatoes, crumble the feta on top and finish with a touch of olive oil and fresh herbs. Enjoy with nice country style bread or grilled meat!
