Martha Stewarts Rhubarb Iced Tea, Photo by Lara Ferroni. 8 stalks rhubarb, cut into 3-inch lengths 8 cups water 1/3 cup sugar, or to taste Fresh mint sprigs, for garnish In a large saucepan, combine rhubarb and 8 cups water; bring to a boil, and simmer for 1 hour. Strain the liquid, add sugar to taste, stirring to dissolve, and allow to cool. Serve over ice with a sprig of mint.

These have the texture of fudge. I wish that the cream cheese topping was a little more spreadable, so that it would marble in more instead of just laying on top. Loved this with my fresh raspberries, but put them on last so you can swirl the others together!
