    Breakfast! Organic no bake energy balls. Oatmeal, ground flax, peanut butter, chocolate chips. honey (or agave) vanilla and toasted coconut flakes. Made them this weekend and the kids LOVE them. Easy summer breakfast if you make them the night before. It's hard to find unsweetened coconut flakes but you can look in bulk bins or Bob's Red Mill makes some.

Pumpkin No Bake Energy Bites. I'm a sucker for granola bars, but they sometimes contain excessive added sugar or are highly processed. These are a great alternative; easy to make; and rich in Vitamin A, Fiber, omega-3 fats, and also have some protein.

Pumpkin No Bake Energy Bites 8 oz. (about 1 packed cup) chopped dates 1/4 cup honey 1/4 cup pumpkin puree 1 Tbsp. chia seeds or flax seeds 1 tsp. ground cinnamon 1/2 tsp. ground ginger 1/4 tsp. ground nutmeg pinch of salt 1 cup old-fashioned oats (dry, not cooked) 1 cup toasted coconut flakes 1 cup toasted pepitas (pumpkin seeds)
