preheat oven to 400F. Peel sweet potato, boil ca 6-7 minutes or until tender enough to poke with a fork. Run under cold water & slice a little thinner than 1/4". Use a cookie cutter to cut the design. Brush with a little melted coconut oil. Sprinkle with either sea salt or cinnamon, place on baking sheet & bake for 25 min (or until crispy), turning once half way through.
