I love cookbooks and this one is packed full of healthy recipes like this Quinoa Quiche which is actually called Comforting Cheddar and Broccoli Quiche with Quinoa Crust but I thought that title was a little long!!
Crispy Orange Cauliflower - Vegan, Gluten-Free. Made tonight w TJ gluten free flour blend. Subbed many things bc I didn't have green onions or an orange. And i baked the cauliflower instead of frying. Served over quinoa. Tastes pretty good.
Raw Herb Cashew Cream Cheese--serve with raw veggies instead of crackers for Eat to Live! Ingredients: 1 1/2 cups raw cashews, chopped in half if whole cashews, 4 tbsp cider vinegar, 2 tbsp lemon juice, 1 tsp lemon zest, 3 tbsp water, plus water to soak the cashews, 3 spring onions, diced, 2 tbsp chopped chives, 3 tbsp chopped flat leaf parsley, a good pinch o’ sea salt, a good pinch o’ fresh ground black pepper.
