This Mexican-inspired salad made with black beans, corn, red peppers and avocado in a lime cilantro vinaigrette is the most popular recipe on my website and has been pinned over 650,000 times on Pinterest. It is often referred to as "veggie crack" because it so addictive.
Great homemade Salsa:
2 cans of diced tomatoes
1 litle can of diced green chilis
1/2 bunch cilantro chopped
1 clove of garlic minced or garlic powder
3-4 whole green onion (stem included) chopped up
Couple shakes of red pepper flakes
1 tsp of salt (I usually add a little more...I like salty)
Blend it all together minus the tomatoes, then add the tomatoes and blend a little to mince the tomatoes.
Texas Caviar (Weight Watchers 0 points) 1 (14 ounce) can black-eyed peas, rinsed and drained ½ C. red bell pepper, chopped ½ C. thinly sliced green onions ½ C. refrigerated fresh salsa ½ C. chopped fresh cilantro 1 garlic clove, minced 1 Tbls. fresh lime juice 1 tsp. dried oregano
The tropical flavors of pineapple and lime combine with red onion, cilantro and serrano pepper for a salsa that's great with grilled pork, skirt steak, shrimp or tofu. It's also delicious with tortilla chips or spooned over tacos. For the best flavor, make at least 30 minutes ahead of time to allow the flavors to mingle.
