Roasted Veggies, my go-to side dish (or sometimes even meal)! Here's what I do: Cut up one large red skin potato into 16ths. Cut half a purple onion into wedges. Cut half a red bell pepper into chunks. (I also add other veggies, like carrots or summer squash if I have them around. Use what you have on hand/like!) Toss everything into a gallon Ziploc bag. Drizzle some olive oil, then add a dash of garlic powder and black pepper, followed by a few good shakes of Lawry's. Shake it up in the bag, and make sure everything is coated evenly. I spray a baking sheet with Pam (even with the olive oil I find they still stick), and bake at 375 until the potatoes are easy to stick a fork in, usually 30-40 minutes.
