Raw Avocado Kale Pesto. I am including this recipe because I love the idea of such a healthy 'pesto' with avocado and kale, but also to remind you that you can make your own noodles. If you don;t have a spiraliser (must get one!), just make flat 'noodles' with your normal peeler.
Creamy Avocado Pasta 🍈 Like Alfredo, but healthy 🍈 10-12 small Campari tomatoes, quartered; 3-4 TBsp olive oil; 4 servings of fettuccine noodles; 2 ripe avocados, seed and skin removed; 2 garlic cloves, peeled; ½ tsp salt; 2 TBsp lemon juice; ¼c pine nuts; grated fresh Parmesan cheese 🍈 if you want to increase the protein,add some grilled chicken.
