McMuffin Casserole This is one of the best breakfast casseroles that we've made. It has all the flavors of an Egg McMuffin in casserole form. This casserole is assembled in minutes the night before and baked when you are ready. I used Bays English Muffins - my favorite. They are found in the refrigerated section of the grocery store, near the milk.
Ham-Asparagus and Cheese Strata 8 oz asparagus spears, cut into 2-in pieces 5 cups French bread cubes 2 cups shredded Gruyere or white cheddar cheese 1/2 cup chopped onion 1/4 cup chopped chives or green onions 8 ounces cooked ham, diced 10 eggs 1 1/2 cups milk
