4 head fresh broccoli 1/2 red onion 1/2 lb bacon 1 cup craisins 1 cup cashews 1 cup mayonnaise 1/4 c sugar 2 T white wine vinegar cook bacon-cool and crumble. Cut broccoli/onion into thin bite-size slices. Combine with the bacon, craisins, cashews and mix well. dressing: mix the mayonnaise, sugar and vinegar together. chill and serve
Quinoa and black bean casserole: No meat, but 15 g. protein! - I added a couple handfuls of fresh spinach, a little bit of garlic powder, and used 2 cups cooked quinoa with 1 sweet potato (that's all I had!). Also, note to self: do not use your awesome new mandoline... the sweet potatoes won't cook through.
