Thai Curry Chicken - 1 lb chicken breast fillets 2 teaspoons vegetable oil 1 cup coconut milk 2 1/2 tablespoons panang curry paste 1 – 1 1/2 teaspoon fish sauce (to taste) 8 small potatoes or 2 large potatoes (optional) basil for garnish (optional) Thai Red Curry Powder Ingredients • 2 tbsp Coriander seed • 4 tsp Cumin seed • 4 tsp Paprika • 2 tsp Black Pepper • 2 tsp Turmeric Grind all ingredients fine.
Thai Green Chicken Curry: Try this served over riced cauliflower...this is my favorite curry, sweet & hot with lots of delicious sauce to be soaked up by whatever you're serving it over. You can also thin the sauce a bit and shred the chicken to serve as a chilled soup.
Thai Basil Chicken..... I WANNA GO HOME!!! Fairbanks has one of the most AHHHHMAZING Thai restaurants ever called The Thai House (on 5th Ave.) that had this and it was the most incredible Asian food I've ever put in my mouth. So homesick but maybe I bring a little Alaska to my Army kitchen:)
