Zesty Italian Potatoes. Red potatoes cubed with skin left on, drizzle with extra virgin olive oil, coat with a package of zesty Italian dressing mix and stir to coat, add minced onion for flavor, salt and pepper to taste. Cook 400 degree oven for 45 minutes or until tender. Top with grates Parmesan cheese.
Roasted Red Potatoes (425* for 30 minutes) Dice them up into 1/2 inch squares, toss them with salt, pepper, olive oil, a little lemon juice and chopped rosemary. (These were fabulous, cook directly on sheet pan - no foil lining the pan because they stuck and didn't get crispy)
Boil potatoes for about 20 min until fork tender. Drain. Coat a rimmed cookie sheet well with olive oil. Place potatoes on cookie sheet and press with the bottom of a glass. Drizzle with more oil and salt and pepper to taste. Bake at 425 for 20- 30 minutes until slightly golden. Maybe add some onion powder, shredded cheddar cheese, and bacon bits to the top..
Sliced baked potatoes...yum! Preheat oven to 375 degrees F (Can also do in Microwave for 6 plus minutes) Brush both side of potato slices with butter; place them on a cookie sheet. Bake in the preheated 400 degrees F oven for 30 to 40 minutes or until lightly browned on both sides, turning once. When potatoes are ready, top with bacon, cheese, green onion; continue baking until the cheese has melted; Add a dollop of sour cream when done and enjoy!!
