Taco Bake - was excellent! We added in some peppers, black beans & corn. I don't think I could really tell the corn chips where on the bottom, so next time I don't think I would even worry about them. Leftovers made excellent nachos! That was a favorite!!
Fiesta Chicken Casserole: 2 Cups Cooked Chicken Breast, 2 Cups Cooked Pasta Shells, 2 Cups Cheddar Jack Cheese, 1 can Cream of Chicken Soup, 1 Can Rotel, 1/2 Cup Milk. Cover top with cheese. 350-Degrees for 20 Minutes.

Easy Mexican Casserole Don is making this now.....sure looks good. The chip layer seemed to be soggy, so we decided next time to leave them out of the baking but sprinkle them on our plates and then dish up the baked mixture. Will try Fritos next time!!!!
