6/14/12 - Sloppy Joe Casserole Recipe from Pillsbury - This was quick and easy, which is one of the things I like about these Pillsbury recipes. I made my own sloppy joe sauce instead of using the canned version... just half a can of tomato soup, ketchup, mustard and vinegar. It's not spectacular or anything, but it's a good thing to keep in mind when you want a quick meal.

Sloppy Joe Casserole...Made a version of this tonight. Instead of the topping they used, I mixed up a couple of boxes of Jiffy and threw in some cheddar I grated. I didn't have tomato sauce, but I had a can of diced tomatoes with green pepper and celery. I added that (along with the red pepper I used in place of the diced green pepper in the recipe). I adjusted ketchup to taste. The family approved.

I use 1 pound of 93% lean ground beef, 1 can of Manwich Bold, 1 can of Grand Jr Flaky Layer biscuits, 1/2 -3/4 cup finely shredded cheese of choice. I stand the biscuit halves all over the top of the meat mixture and cover with cheese before baking. Everyone here loves it!
