I viewed a bunch of tortilla soup recipes and took a little of this and a little of that to come up with a recipe that worked for me in a crockpot...

    - Breast meat from left over rotisserie chicken - 1 medium onion (diced) - 6 cloves of garlic (minced) - handful of cilantro leaves (minced) - 1 zucchini (diced) -1 yellow summer squash? (looks like zucchini; also diced) - 1 box of chicken stock - 1 packet of taco seasoning - 4 cups of water - 3 tbsp tomato paste - 1 can of diced tomatoes and chiles (Rotel) - Garnishes: Monterey Jack Cheese, sliced avocado and tortilla strips - Saute garlic in olive oil, then saute onions, add in fresh veggies and cook all together for about 10 minutes. - Throw in to the crockpot. Add remainder of ingredients. Make sure to whisk in the tomato paste well. - Cook on low for at least an hour to let all the flavors get to know each other ;) - Serve hot with cheese and avocado and tortilla strips. YUM ;)
