Baked Banana Oatmeal In a large bowl, combine 2c oats, 1/8t salt, 1/2 cup brown sugar, 1t cinnamon, and 1t baking powder. In a small bowl, combine 1 1/2c milk, 1t vanilla, 1 mashed banana and a beaten egg. Add milk mixture to oat mixture; stir well. Line the bottom of an 8x8 greased baking dish with 1 sliced banana. Pour the oat mixture over and top with another sliced banana. Bake at 375 for 25 minutes. Sprinkle 2 tablespoons of brown sugar. Broil for 1 to 2 minutes, or until sugar melts.
