Baked Mozzarella Sticks. These were pretty good, like the recipe says you have to eat them right out of the oven (when they cool off a little) otherwise they aren't good. The breading was really yummy and they were great dipped in marinara sauce. They weren't as good as restaurant style ones, not as soft and creamy but still good for making them at home. And easy too!

Avocado dressing for tacos 1 large avocado 1 Tablespoon 2 teaspoons fresh lemon juice 1/2 cup greek yogurt 1 teaspoon hot sauce 1/4 extra virgin olive oil 2 garlic cloves 3/4 teaspoon salt

Avocado Egg Salad: 4 hard-boiled eggs, 1 large avocado, 2 T. yogurt, 1 t. curry. Pinch of salt and pepper.

Fresh Tomato & Mozzarella on Toast: 173 calories per serving as is. Healthier version...whole grain bread, lowfat cheese. Looks yummy!
