Low-Carb Broccoli Bites Recipe Pre-heat oven to 375 degrees. 16 oz Chopped Brococoli 3 Eggs 1 cup crushed French’s Fried Onions 1 1/2 cups 2% Sharp Cheddar Cheese Salt & Pepper Mix all ingredients well, adding salt and pepper to taste. Line Cookie sheet with parchment paper. Using hands form into balls. Bake for 25 minutes at 375 degrees. Yields 20. FYI- Two Weight Watchers Points each.
My mom makes these ALL the time :) Spinach Balls 2(10 oz.)pkgs frozen spinach, thawed & well-drained 2 sm onions, very finely chopped 2 1/4 c. stuffing with herbs (I use Pepperidge Farm) 6 eggs, beaten; 1/2 c. melted butter 1/2c Parmesan cheese;2tsp garlic salt 1tsp. black pepper Mix all ingredients. Form n2 about 1" balls; place on a baking sheet w/cooking spray. Bake@350 for 20min
Parmesan Tomato Bites 2 Tomatoes 1 1/2 oz Parmesan Cheese 1 tsp, leaves Spices, oregano, dried 1 dash Salt 1 dash Black Pepper 1 tablespoon Olive Oil Preheat the oven to 450 F. Slice Tomatoes. Place them on a baking sheet. Top with shredded Parmesan, fresh oregano, salt and fresh ground pepper (season according to your taste). Drizzle with some olive oil and bake until tomatoes are tender and the cheese is melted, for about 10-15 minutes.
Cheesy Cauliflower Pancakes 1 head cauliflower 2 lg eggs/egg whites 1/2 c cheddar cheese, grated 1/2 c panko (gf) 1/2 t cayenne pepper (to taste) salt olive oil Cut into florets, cook in boiling water until tender about 10 minutes, Drain, Mash while still warm. Mix all but oil. Coat griddle/skillet with olive oil over medium-high heat. Form cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Makes 8 pancakes
LOADED CAULIFLOWER 1 c cooked cauliflower 1 tsp butter Salt and pepper, to taste 1 oz cheddar cheese, shredded 1 Tbsp ranch dressing or sour cream 1 strip bacon, crumbled 1 teaspoon chives Butter and season the cauliflower. Place in an individual-serving baking dish, then top with the cheese. Microwave or broil until the cheese is melted. Top with ranch dressing, bacon and chives.
