Potatoes, zucchini, baby carrots, sweet potatoes, whole garlic cloves, onions and tomatoes at 350 for 45 minutes. Dust with parmesan for the last 10 minutes.

This is our favorite way to eat broccoli of all time! My husband says he would rather eat this than fries. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.

Crusty Parmesan zucchini - Slice zucchini down the middle, lightly brush both sides with olive oil and top with Parmesan cheese and fresh herbs. Salt & pepper to taste. Bake at 350 degrees for 15 minutes and finish with 3-5 minutes under the broiler until cheese is crispy and browned.

Could this be any easier? Roll out puff pastry dough, bake 15 minutes at 400. Sprinkle with Gruyere (or cheese of your choice) and top with Asparagus. Brush with oil, top with salt and pepper. Bake another 20-25 minutes.
