BIKINI FIT LUNCH: Black-eyed Pea Salad 2 cans black-eyed peas, 1 diced tomato, 1/2 diced red onion, 1 small or 1/2 large red, yellow, or orange bell pepper, 1 jalapeno,4 green onions, 1/3 cup cilantro, 1/4 cup rice wine vinegar (unseasoned), 2 Tbsp. canola oil, 1/2 tsp. organic cane sugar, salt and freshly ground black pepper. Bean dishes are a good substitute for meat dishes when trying to get fit!
Cucumber and chickpea salad - Easy to make and probably easy to double for a week of lunches. Not a huge citrus fan so used a little less lemon and lime and it was still fantastic! - baconcheeseburger-sundays
Italian salad. Romaine lettuce, grape tomatoes, chickpeas, artichoke hearts, green and black olives, red onion, roasted red peppers, cucumbers, diced provolone cheese, salami and cooked ditalini pasta. Vinaigrette dressing. (I am leaving out the salami)
Mediterranean Inspired Kidney Bean Salad Recipe ~ 3 cans of kidney beans, 1 red bell pepper - diced, 1 yellow bell pepper - diced, 1/2 red onion - diced, 1 small bunch of parsley - chopped, 2 lemons - juiced, 1 tbs olive oil, and salt to taste.
