White Christmas Cake - For the Vanilla Cake: 5 large egg whites, at room temperature ¾ cup whole milk, divided, at room temperature 2½ teaspoons pure vanilla extract 2½ cups cake flour, sifted then spooned & leveled 1¾ cups sugar 1 tablespoon PLUS 1 teaspoon baking powder ¾ teaspoon salt ¾ cup (1½ sticks) unsalted butter, at room temperature and cubed

This is THE BEST vanilla "white" cake (and I have been looking for a really nice one for years.) It's wonderful. Fluffy, mildly sweet, moist without crumbling. Decorates well. It will rise quite a bit in the pans, so be sure not to overfill, no matter what size pans/cups you use. FIll them 2/3 full with batter for best result. Fluffy Vanilla Cake
